Some of you might not agree with this but Rurouni Kenshin: Trust & Betrayal is a gory anime. There were blood everywhere especially when Kenshin slashed his enemies. The tv series is not gory though.
Elfen Lied is not gory. Gory is about exploding intestines, bursting brains, eye balls flying everywhere, decapitated hands crawling, wriggling itself to death, giant penises fucking a girl's brains out. That's gory.
Elfen Lied is just bloody. Boring, plain, blood. And naked. Boring, cute naked.
And if Elfen Lied is not gory. Where does Samurai X end up? The kindergarten section?

I haven't seen a HUGE amount of anime, but I still remember Akira being pretty...eh...splatter-worthy.
I would say Heavy Metal 2000, but that's not anime as far as I know.
